Just like I love curling up on my sofa cozied up in a warm blanket and thick socks enjoying soup in the winter, there is nowhere I love to be more in the Spring and Summer than the outdoors- whether its siting on a blanket at the park with my friends throwing the ball for bobi, or paddleboarding down the street, or walking on the beach with my best friends, or watching the nieces and nephews play hide and seek in the back yard. But the one thing that makes me happiest on days like thees is a nice fruit salad
With every warm weather family get together, there is usually some new recipe involved and I love bringing it up something, simple, fresh yet slightly indulgent that everyone will eat right away. You guessed it, I love to treating my friends with Berry Salad with Honey Mascarpone.
The Honey Mascarpone envelopes the fruit in a sweet and tangy velvety mix that is nice and creamy! And although the Honey Mascarpone tastes restaurant gourmet, it is easy to make, simply by whipping mascarpone, vanilla Greek yogurt, honey, sugar, lemon juice and red wine vinegar together. If you aren’t familiar with mascarpone, its an Italian cheese that is rich and creamy with a subtle milky, sweet, slightly tangy flavor, that is somewhere in between butter and cream in texture so it whips up and envelops beautifully and tastes awesome.
As far as the berrys go in this fruit salad, you really can use whatever fruit your like and desires or whatever you have on hand, but I particularly love the pairing of sweet tart berries with the smooth Honey Mascarpone. The Honey Mascarpone is nice you can even just serve it as a dip instead of mixing it with your berries – whatever suits your mood, – as long as you devour Honey Mascarpone somehow, some way somewhere
And in case you want to get a little fancy for Sunday special meal, this Berry Salad makes the perfect filling for lettuce wraps and looks so beautiful! I like to sprinkle mine with a little Caramelized Pecans, choice is your this is only a guideline
INSTRUCTIONS
Add all of the fruit to a large bowl.
Whisk together all of the honey Mascarpone ingredients until very smooth. Add honey Mascarpone to fruit and gently fold together until well combined. Add additional sugar for sweeter, more lemon for tangier. Best if served within the hour.

1 lb strawberries, chopped
6 oz. raspberries
6 oz. blueberries
1 1/2 cups red seedless grapes, halved
Honey Mascarpone
1/2 cup ( 4 oz.) Mascarpone, softened
1/4 cup greek vanilla yogurt (i use nonfat)
1 tablespoon honey
2 teaspoons sugar
1 tablespoon lemon juice
1 tablespoon red wine vinegar
GARNISH
Zest from one lemon
